Butterscotch Cookie Recipe


I made these yesterday and they are simply yummy! They are the perfect cookie…crispy, gently sweet and everything a good cookie should be!

Here is the recipe:

Butterscotch Cookies
120g softened butter
1 Cup soft brown sugar
pinch of salt
vanilla essence, to taste
1 egg
1 1/2 Cups self-raising flour
1/2 Cup rice bubbles

Makes 24-30

Preheat oven to 180. Grease baking trays.

Cream butter and sugar, and then beat in salt, vanilla and egg. Sift in flour, add rice bubbles and mix. Knead until dough is smooth. If you’re in a hurry, just place spoonfuls onto prepared trays and press with the back of a fork. Otherwise, roll mixture into a log, wrap in greased paper and chill until firm, then cut into slices and place onto trays. Bake until golden brown.

And do have one while they are still warm!
