This recipe is a hit! No matter where I take these cookies they are the stars of the show! I had never heard of the chocolate, coconut, apricot combination until a couple of years ago when I first tried out this recipe and it has become a favourite in my house which is quite amazing as my hubby is not a big dried fruit fan! Do yourself a big favour and make a batch of these this weekend!
125g softened butter
1/3 Cup caster sugar
1/2 Cup firmly packed soft brown sugar
1 egg, lightly beaten
1 Cup self-raising flour
1 Cup chocolate chips
1 Cup shredded coconut
3/4 Cup chopped dried apricots
Preheat oven to 180. Grease a baking tray.
Cream butter and sugars until light and fluffy. Beat in egg until just combined. Stir in sifted flour, choc chips, coconut and apricots. Mix to a firm dough.
Place teaspoonfuls of mixture onto a prepared tray, spaced about 5 cm apart, and flatten slightly. Bake for about 15 minutes. Remove from the oven and let stand on the tray for 5 minutes turning onto a wire rack to cool.
