This is some seriously good soup!


When I first saw this recipe for potato and carrot soup I was rather sceptical. But! This  is some really good soup! It’s only of our favourites. It’s really easy to make and goes great with a slice of home made bread on a cold day! So here is the recipe for you all to try:)

                        Potato and Carrot Soup


2 T oil

2 cloves garlic, grated

1 onion, chopped

2 t cumin

1 t coriander

4 carrots, chopped

750g potatoes, peeled and chopped

4 Cups vege stock

½ Cup coconut cream


Heat the oil in a pan, add garlic and onion and cook until softened.  Add the cumin, coriander and ½ t salt and cook for another minute.  Add the carrot and potato and toss to coat.  Add the stock and bring to the boil.  Reduce heat and simmer for 20 minutes, or until the vegetables are tender.  Cool slightly. Process in batches, until smooth, then return to the pan and heat gently.  Stir in the cream.
