Lemon and Poppyseed Cupcake Recipe


These babies are one of my very favourite treats! I thought I would share the recipe with you all! 🙂

Lemon and Poppyseed Cupcakes

Heat oven to 180C. 

2 Cups self-raising flour

1 Cup sugar

1/2 Cup poppyseeds

finely grated rind of 2 lemons

100g butter

2 large eggs

1 Cup milk

Measure the flour, sugar, and poppyseeds into a large bowl.  Finely grate all the coloured rind from the lemons and add to the flour mixture.

Heat the butter in a microwave dish until just melted.  Add the eggs and the milk and beat until everything is thoroughly combined.  Tip the liquid into the dry ingredients and fold together until the flour is dampened.  Do not over beat.

Spoon mixture into 12 muffin pans which have been lightly oiled or use paper cases.  Bake for 10-15 minutes or until golden brown.
