This is a traditional South African pudding and is delicious! It’s easy to make and is a hit wherever you take it!
I thought I would share my personal favourite recipe with you all:)
Preheat the oven to 180C.
Pastry
1 Cup flour
1/4 Cup sugar
60g butter
1 egg
pinch of salt
1 t baking powder
Blend the following ingredients together until they form into a ball (I use my mini food processor) and then press into your dish. Bake until it goes lightly golden. Set aside to cool while you make the filling.
Filling
4 Cup milk (I use vanilla soymilk, it tastes better than dairy milk but you can use either or)
2 T margerine or butter
2 1/4 T flour
1 Cup sugar
1/4-1/2 Cup cornflour
2 eggs
1 t vanilla
Boil the milk and butter. MIs the rest of the ingredients together and add to the boiling milk. Stir till thick. Pour into your base and sprinkle with cinnamon. Refrigerate. Enjoy:)
