County Italian Sausage Stew
375g braai sausages (frys vegetarian sausages)
1 can (410g) butter beans, rinsed
575g pasta sauce
300g potatos, peeled and chopped
IN a pot, lightly brown the sausages. Add the remaining ingredients and cook over a medium heat for 45 minutes or until the potatos are tender.
This is a hit in my home with some freshly baked bread!

I know I have been away for what seems like ages! In the last few weeks a lot of things have happened including a road trip holiday, getting a new car, lots of job applications and many other things. In short, not a lot of time left over for blogging.
Right now I want to share a yummy soup recipe with you all. This was always my Mom’s go to recipe when I was at home and it’s still a favourite of mine.
It’s so simple to make and everyone loves it. With some freshly baked bread it makes a wonderful meal.
1 Cup lentils
1 400g tin tomatoes
5 Cups water
1-2 t salt
1 t herbs
Blend all ingredients except the lentils. Throw everything in a pot and cook until the lentils are tender.
We have been having a lot of pumpkin this week as I had a huge one to use up. We have had pumpkin and chickpea pie for dinner and pumpkin and black bean flautas. I even tried a pumpkin smoothie…that was not so successful;) With the last of my pumpkin I made a pumpkin nut loaf yesterday. Hubby loves it!

I have this things with owls at the moment! I just love them! And this week I found three bargains which are owl related and just made my day!
My toiletry bag is more than 8 years old and the zips are sticking etc. Today I was at this shop in town and saw this vanity bag (can double as toiletry bag) and I just fell in love! Totally brightened my day!

It really is the little things that make life good!
I know that it’s been a while since I have posted anything. I have been having a relatively quiet couple of weeks just enjoying knitting on these cold winter days. Doing housework, cooking wintery meals for Hubby and me and generally being a housewife. I have not had a car for a couple of weeks now and as frustrating as that can be I have rather enjoyed the peace and quiet that comes with getting to stay home and just be. I will be getting a new car in a couple of days so I am savouring these quiet days while I can.
Last weekend my Liefie and I woke up on a beautiful, crisp, sunny morning and decided to take a drive north to a peninsula that we have never explored properly. We had the most amazing day driving around, chatting, taking photos, and just revelling in the beautiful weather and beautiful places we were in. God really did outdo Himself when He created this planet! It was the most wonderful day. One that I will remember for a long time as being very special and blessed. We sure do live in a beautiful country!
