This is such a yummy soup recipe I just had to share it with you!
400g frozen peas
60g green lentils
1 small onion, chopped
3 1/2 Cups vegetable stock
30g plain flour
1 t curry powder
3 Cups water
100g thin spaghetti, broken into pieces
1/3 Cup coconut cream
Place peas, lentils, onion, and stock in a saucepan and bring to the boil. Reduce heat and simmer, stirring occasionally, for 40-45 minutes or until lentils are cooked.
Remove pan from heat and set aside to cool slightly. Puree pea mixture with a stick mix or blender. Set aside.
Melt the butter in a saucepan over a low heat, add flour and curry powder and cook, stirring, for 1 minute. Remove pan from heat, gradually stir in the water and continue mixing until smooth. Return pan to heat and cook, stirring, until soup boils and thickens.
Reduce heat, stir in pea puree and spaghetti and simmer for 10 minutes or until spaghetti is cooked. Stir in cream and mint and simmer for 1 minute.
