Lavender Biscuits

Today I made lavender biscuits for the first time.  I was a little skeptical but they are actually really yummy!  I thought I would share the recipe with you all!

Lavender Biscuit Recipe

 

55g caster sugar

1 t chopped lavender leaves ( I misread the recipe and put 1 T in and they still taste great)

115g butter, softened

finely grated rind of one lemon

175g plain flour

 

Place sugar and lavender in a food processor. Process until the lavender is very finely chopped, then add the butter and lemon rind and process until light and fluffy. Add the flour and mix till it forms a still dough.

Roll out on and/or between baking paper and cut out shapes with cookie cutters. Transfer them to your cookie sheet with a spatula as the cookies crumble easily.  

Bake at 150 degrees Celcius for 12 minutes.
